For those of us in cold weather areas, winter is major comfort food season. The shorter days, miserable weather and likelihood that at least once a week someone in the house has a runny nose means a favorite recipe feels extra nice.
What are some of your favorite comfort foods? Feel free to share a recipe.
I’m not big on cooking or baking, but hey, I live in Wisconsin so I have to have at least one unhealthy recipe that’s loaded with cheese. I have a yummy broccoli and cheese soup, broccoli and four cheese rice, several different cheese-loaded potato casseroles, etc., etc.
I decided to just go different and offer…my favorite grilled cheese!
- 2 large slices sourdough bread
- 2 Tbsp. shredded Parmesan cheese (not that canned stuff)
- 2 Tbsp. shredded Swiss cheese
- 2 Tbsp. shredded Sharp Cheddar cheese
- 2 oz. Gruyere cheese, sliced in thin pieces
- chopped chicken (optional)
- thinly sliced tomato
*You can make this one in the broiler, toaster oven or on the stovetop – I use the broiler, just because it melts more evenly.
Set the broiler to low. Spray the pan with non-stick spray, using butter substitute (butter burns), coat one side of each piece of bread. On dry side, evenly distribute half of each kind of cheese. Top one piece of bread with the chicken, one with tomato slices. Broil until cheese is melted, after you assemble the sandwich let it set a minute to let it get all gooey before you cut it and then yummmmmmy.
If you’re a Philistine, you can stick that processed American stuff in there someplace. *shudder*
My other big comfort food is bread pudding, but I never manage to find the recipe I want so I use a different one every time. I just pick one from the internet that looks good – they all are pretty much the same. Bread, eggs, sugar, milk, vanilla. No bourbon sauce for me, just a little extra milk and cinnamon after it’s warmed up.
Now I’m hungry.

Oh, grilled cheese is the PERFECT comfort food! I need to your version someday, it sounds YUM.
Oh absolutely I love grilled cheese.I always want to order it at restaurants and they only have it on the kids menu. Now that I have kids I can order it. Have you ever eaten the grilled cheese at the Cheesecake Factory? I will have to try your recipe, but I think I will skip the chicken because I am a purist… just want cheese. A Philistine?? I need to google that!

Grilled cheese is da bomb!
I’ve been feeling like total crap and forgot all about TMST. Ugh. I’m not much of a cheese person, so no grilled cheese for me. Bread pudding, though… mmmmmm.
